Could anyone tell me which setup would give me better performance?

2X 2600xt 256mb gddr3 crossfire
or
1X 2900xt 500mb gddr3

someone told me there is a stability issues with crossfire/sli, is it true and is there any other issues with cf/sli that i should be aware of? I would be using asus P5K-E/WIFI-AP or asus P5K-DELUXE/WIFI-AP in my rig
