The HTPC is up and running! The specs are a little different than intended, and it's only working, not fully completed.

The front drive assembly; an LG DVD-RW drive and a Western Digital Caviar 80GB drive. The HDD actually ended up getting moved to the bottom of the drive chassis. This is only the system drive, a second HDD is being added for recording and media storage.

The motherboard I ended up getting is the Asus P5KPL-AM SE. I have nothing but love for ASUS boards so far.

I stuck the E4600 processor I recycled from my old computer into this. I also put in the Apacer/Kingston combo 3GB RAM duo I had in it. (667MHz)

I loaded the motherboard into the Minuet 350, and connected all the necessary wires, besides the drive cables.

I shoved in the front drive assembly, and connected all necessary wires, and did some form of cable management in the process. I booted 'er up, and so far, everything seems to be running smoothly (except the cpu temps are a little off--idles at about 45C, and core 1 is always hotter than core 0)

Parts left to get: A cheap 1TB SATAII HDD for storage and recording; probably a Hitatchi or WD GreenPower, an HD 4550 low-profile PCI-E card, and the Asus ES3-100 MyCinema 3in1 PCIe TV Card. The project should be complete by the end of the week.

I also found a wicked desktop background for it:
