If you limit your SMP clients to ~97-98% CPU usage it should leave enough free for the GPU, depending on your O/S...
As 3.0charlie said if you want to run more than one GPU client, you need a monitor for each, or at least a dummy plug. Don't forget to extend your desktop and use the -local flag...
